Cookie Dough Protein Balls
If you're like me, you are always looking for on the go snacks that are healthy and full of protein! I have found that I'm spending so much money on store bought protein bars (and the prices just keep going up) that I thought it was time to take some Sunday prep time and make my own!
These protein balls are simple to make and come together quickly! Give them a try and let me know what you think!

Ingredients:
1/3 cup Protein powder (I used vanilla Shakeology)
4 tbsp honey
1/2 cup Nut butter (warm nut butter in the microwave for about 30 seconds. This will help the dough mix better)
2 cups Oat flour (if you don't have oat flour, you can put regular oats in a blender and blend until they are a fine powder. You can also find oat flour on Amazon.
2 tsp Vanilla extract, pure
1/2 cup unsweetened almond milk
Optional, but highly recommended: 1/3 cup chocolate chips (I like Lilys brand)
Directions:
Place all ingredients in a bowl and using your hands mix the dough together.
If the dough continues to crumble, add in small amounts of unsweetened almond milk until the dough comes together.
Roll balls that are about 1 inch in diameter.
Balls will store in the fridge for 3 to 5 days.
For longer storage put in a freezer safe container and store in the freezer for up to 3 months.
