Cookie Dough Protein Balls

If you're like me, you are always looking for on the go snacks that are healthy and full of protein! I have found that I'm spending so much money on store bought protein bars (and the prices just keep going up) that I thought it was time to take some Sunday prep time and make my own!


These protein balls are simple to make and come together quickly! Give them a try and let me know what you think!



Ingredients:

  • 1/3 cup Protein powder (I used vanilla Shakeology)

  • 4 tbsp honey

  • 1/2 cup Nut butter (warm nut butter in the microwave for about 30 seconds. This will help the dough mix better)

  • 2 cups Oat flour (if you don't have oat flour, you can put regular oats in a blender and blend until they are a fine powder. You can also find oat flour on Amazon.

  • 2 tsp Vanilla extract, pure

  • 1/2 cup unsweetened almond milk

  • Optional, but highly recommended: 1/3 cup chocolate chips (I like Lilys brand)

Directions:

  • Place all ingredients in a bowl and using your hands mix the dough together.

  • If the dough continues to crumble, add in small amounts of unsweetened almond milk until the dough comes together.

  • Roll balls that are about 1 inch in diameter.

  • Balls will store in the fridge for 3 to 5 days.

  • For longer storage put in a freezer safe container and store in the freezer for up to 3 months.
