Semi-homemade 15 minute Caprese pizza!

I don't know about you, but the last thing that I want to do after a long week is cook a big dinner. I also feel like the end of the week should be something fun and little bit of a "celebration," so I always lean on convenience meals (Trader Joe's has some of my favorite frozen meals).


Pizza is one of those all-time delicious comfort and convenience meals that just screams a little celebration to me. I love that about pizza, but I don't love the calories, grease, and bloating that usually follows a delivery pizza, and that's when I decided to try my hand at making a pizza at home.





I began by being ambitious and thought about making the crust from scratch, but quickly decided against all of the sifting and rising that would need to be done to make the crust perfect. Plus, it's Friday. I don't want to be cooking. I want to be having fun with my family. So, that's how this 15 minute semi-homemade pizza was born!



Ingredients:

  • Naan pizza crust (this is the one I used)

  • Two fresh Roma tomotoes

  • 1 to 2 ounces mozzarella cheese

  • Basil - I used about 5 leaves - but make it your own :)

  • Balsamic vinegar glaze (I used this one)

  • 2 tsp. olive oil

  • Kosher salt and pepper to test

Directions:

  • Preheat oven to 400 degrees

  • Drizzle olive oil onto the flatbread and warm in the oven for two minutes

  • Slice tomatoes, mozzarella cheese, and basil

  • Take flatbread out of the oven and arrange tomatoes, cheese, and basil.

  • Put back into the oven for about 8 minutes. I watched it closely until I saw the cheese had melted.

  • Take out of the oven, drizzle the balsamic glaze on top and sprinkle salt on top.

  • ENJOY!

The great thing about pizza is you can make it your own! Have fun with trying different toppings to your liking or adding more or less of any of the ingredients. The flatbread is a perfect blank canvas for you to have a little fun!
