The easiest gluten free blondies!

It can be so hard to find a good gluten free baked-good! Believe me, I've done the leg work. I've been gluten-free for over two years now and I've tried all the breads and pastries hoping to find something delicious and unfortunately they always missed the mark until now...these little blondies are SO EASY to make and are delicious! My four-year old niece had three pieces with me! She absolutely loved them!


Ingredients:

  • 1 15 oz. can of chickpeas (drained and rinsed)

  • ½ cup of nut butter

  • ⅓ c. maple syrup

  • 1 egg

  • ½ tsp. vanilla extract

  • ½ tsp salt

  • ¼ tsp. Baking soda

  • ½ tsp. Baking powder

  • ½ c. sugar

  • ⅓ c. chocolate chips



Directions:

  1. Preheat the oven to 350 degrees. Spray an 8”x 8” baking pan with cooking spray and set aside.

  2. Put all of the ingredients except the chocolate chips into a blender or food processor and blend until the batter is smooth.

  3. Fold the chocolate chips into the batter and spread evenly in the prepared pan.

  4. Bake for 25 to 30 minutes or until a toothpick inserted comes out clean.
