No bake gluten free apple cinnamon bites

Fall will soon be upon us and all of the delicious flavors of autumn will be here. I can't help but think of apples whenever I think of the coming of fall. These energy bites are the perfect breakfast or snack heading into the fall season!


Ingredients:

  • 1 1/2 cup: Oats (quick or traditional)

  • 1/2 cup: Ground Flax Seed

  • 1 tsp: Cinnamon

  • 1 tsp. Vanilla extract

  • 1/2 cup: Peanut Butter

  • 1/3 cup: Pure Maple Syrup

  • ½ cup: Granny Smith Apples (peeled, cored and grated - about 2 medium sized apples)


Directions:

  1. Wash, grate and drain excess moisture from apples and set aside.

  2. Combine oats, ground flaxseed and cinnamon together in a bowl. Mix well. Add peanut butter, maple syrup, vanilla, and grated apples. Mix well again.

  3. Let mixture cool in the fridge for about 30 minutes to make rolling into balls much easier.

  4. Roll the dough into balls about the size of a golf ball (makes about 20 balls).

  5. Transfer to an airtight container and store in the fridge for three to four days. Enjoy!

Pro tips:

  • Apples are plentiful in the fall - take advantage of the fruit during peak season and give these “bites” a try.

  • This is a great kid-friendly make ahead snack or breakfast for busy mornings!

  • Double the recipe and freeze bites in the freezer for a busy week!

  • Great low sugar treat or anyone in your family!

  • Easy swaps: No maple syrup? Use honey. No peanut butter? Use a different nut butter.
